Banana Mint Cuke Smoothie
Anti-inflammatory, calming, digestion-aiding, refreshing. After a jog on a hot afternoon, this treat replenishes the body and reminds of a spa.
Makes 4 to 6 cups
1 whole cucumber, washed, sliced in one inch thickness, with skin
2 ripe bananas
5 sprigs of mint, leave on stem if it’s soft
Splash of juice (I used orange peach mango)
3 cups of water
5-6 ice cubes
Put everything in the blender. (Make sure your blender can crush ice cubes.) Blend on high for 30 seconds.

You are my go-to person for smoothie recipes, and this one looks delicious and healthy! Although I like bananas, I thought they were a fattening food–but maybe not, or the health benefits exceed the fattening qualities? Thanks, Sue, for all your great info on nutrition!
Gail, excellent question! I thought about the carb points on the bananas. They can be fattening, and you can put 1 in the recipe instead of 2. I read the article on the benefits of bananas and decided that when we want a treat, banana are all right. Thank you always, for your thoughtful comments.
Oh good! Bananas are probably better than ice cream, although a banana split is sounding pretty good right now, LOL!
