Cauli Avo Artichoke Noodle Salad
Fill up with goodness during a hot summer day. Gluten-free, vegan, and fast… Actually my fridge is nearly empty and this is what I come up with.
I had:
A small head of cauliflower
2-3 artichoke hearts (marinaded in water)
2 ripe avocado
1.5 cup cooked GF quinoa-corn pasta*
1 TB olive oil
pinch of sea salt
pinch of ground white pepper
*Box of GF pasta (veggie twists) in picture is great -tastes like ‘regular’ pasta.
Trim, quarter cauliflower, steam for 4 minutes. Cube cauliflower, avocado, artichoke hearts. Mix in large bowl veggies, pasta, oil, salt, white pepper.
To taste: add balsamic vinegar, hot pepper flakes, or herbs like basil or scallions. Enjoy!

Thanks for this recipe–we love pasta and have never come across this combination of ingredients! I agree that the quinoa pasta is delicious.
